      Cooking with Jardin- Mayocoba Bean & Veggie Soup

      Jardin whips up a delicious and nutrious Peruvian bean and vegetable soup.



      Ingredients:



      #1 Peruvian Mayocoba Beans (Actually, almost any white bean will work too)


      1 onion


      2 fresh carrots chopped


      2 Tablespoons fresh garlic chopped


      1 red bell pepper


      1 stalk celery


      Tandoori spice to taste


      salt & pepper to taste


      2 quarts chicken or turkey or veggie broth



      Instructions:



      Combine all ingredients in a stock pot or large soup pot. Bring to a boil for five minutes then reduce heat and simmer for 1.5 hours or until tender. Use an immersion blender or masher to smooth out and blend to a soup like texture.



      Options:


      You may add chicken, sausage, beef, leeks, chili sauce etc. Play with it!
